Beautiful book , complicated recipes with too much back and forth following recipes. I have several bread books that have recipes and how to's, but this isn't just a recipe book (though it does have some simply divine looking recipes) it is a tome of bread science and knowledge. Bought after good review in Waitrose weekend newspaper, and a love of Sourdough bread (and a desire to have a go at making it myself). At first, I liked its coffee table appeal of artsy, hipster photos and earthy rusticity. Read a number of books including The Bread Baker's Apprentice and Artisan Sourdough Made Simple. The pictures alone are worth it. It's so overly complicated and disjointed with 'step by step' approaches that then lead abstractly back to other pages. The book clearly explains why sourdough breads (without added yeast) have added immeasurably to my wellbeing.
